Saffron Chicken Biryani

Ingredients:

  • 1 lb chicken, cut into pieces
  • 2 cups basmati rice
  • 1 large onion, thinly sliced
  • 2 tomatoes, chopped
  • 1/2 cup plain yogurt
  • 1/4 teaspoon saffron threads
  • 2 tablespoons biryani masala
  • 1 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 4 cups water
  • 2 tablespoons ghee or oil
  • Fresh cilantro and mint leaves for garnish

Instructions:

  1. Soak saffron in warm milk.
  2. Sauté onions, add chicken and cook.
  3. Add tomatoes, yogurt, and spices.
  4. Cook rice separately until 70% done.
  5. Layer chicken mixture with rice, drizzle saffron milk.
  6. Cook on low heat and garnish.
