Saffron Chicken Curry

Ingredients:

  • 1 lb chicken, cut into pieces
  • 1 large onion, finely chopped
  • 2 tomatoes, pureed
  • 1/4 teaspoon saffron threads
  • 1/2 cup yogurt
  • 1 teaspoon ginger-garlic paste
  • 1 teaspoon cumin seeds
  • 1 teaspoon coriander powder
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon garam masala
  • 2 tablespoons oil
  • Fresh cilantro for garnish
  • Salt to taste

Instructions:

  1. Soak saffron threads in a tablespoon of warm water.
  2. Heat oil in a pan. Add cumin seeds and onions. Sauté until onions are golden brown.
  3. Add ginger-garlic paste and cook for a minute.
  4. Add tomato puree, coriander powder, turmeric, and salt. Cook until oil separates.
  5. Stir in chicken pieces and cook until they start to brown.
  6. Add yogurt and saffron water. Cook until chicken is tender and the curry is thickened.
  7. Stir in garam masala and garnish with fresh cilantro.
