Saffron Pulao

Ingredients:

  • 1 cup basmati rice
  • 1/4 cup saffron-infused water (soak 1/4 teaspoon saffron in warm water)
  • 1 large onion, thinly sliced
  • 1 cup mixed vegetables (carrots, peas, beans, etc.)
  • 2 tablespoons ghee or oil
  • 1 teaspoon cumin seeds
  • 1 bay leaf
  • 4 green cardamom pods
  • 4 cloves
  • 1 cinnamon stick
  • Salt to taste

Instructions:

  1. Rinse and soak rice.
  2. Sauté spices and onions, add vegetables.
  3. Add rice and water, bring to a boil.
  4. Simmer until rice is tender.
