Ingredients:
- 1 lb shrimp, peeled and deveined
- 1 large onion, finely chopped
- 2 tomatoes, chopped
- 1/4 teaspoon saffron threads
- 1/4 cup coconut milk
- 1 teaspoon ginger-garlic paste
- 1 teaspoon cumin seeds
- 1 teaspoon coriander powder
- 1/2 teaspoon turmeric powder
- 1 teaspoon red chili powder
- 2 tablespoons oil
- Fresh cilantro for garnish
- Salt to taste
Instructions:
- Soak saffron threads in a tablespoon of warm coconut milk.
- Heat oil in a pan. Add cumin seeds and onions. Sauté until golden brown.
- Add ginger-garlic paste and cook for a minute.
- Stir in tomatoes, coriander powder, turmeric, red chili powder, and salt. Cook until tomatoes are soft.
- Add shrimp and cook until pink and opaque.
- Stir in saffron-infused coconut milk and cook for a few minutes.
- Garnish with fresh cilantro.
