Saffron Shrimp Masala

Ingredients:

  • 1 lb shrimp, peeled and deveined
  • 1 large onion, finely chopped
  • 2 tomatoes, chopped
  • 1/4 teaspoon saffron threads
  • 1/4 cup coconut milk
  • 1 teaspoon ginger-garlic paste
  • 1 teaspoon cumin seeds
  • 1 teaspoon coriander powder
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 2 tablespoons oil
  • Fresh cilantro for garnish
  • Salt to taste

Instructions:

  1. Soak saffron threads in a tablespoon of warm coconut milk.
  2. Heat oil in a pan. Add cumin seeds and onions. Sauté until golden brown.
  3. Add ginger-garlic paste and cook for a minute.
  4. Stir in tomatoes, coriander powder, turmeric, red chili powder, and salt. Cook until tomatoes are soft.
  5. Add shrimp and cook until pink and opaque.
  6. Stir in saffron-infused coconut milk and cook for a few minutes.
  7. Garnish with fresh cilantro.
